In the four years the truck has been in operation, Chef/Owner George Kringas has found his business, which specializes in Greek favorites like pita sandwiches, falafel and souvlaki, consistently busy.
And now there's more to love with the truck's new Greek rice bowls, a concept he was conceptualizing for months.
Kringas, a White Plains resident and French Culinary Institute grad, said he picked Yonkers because of the busyness of Central Avenue. Plus, he really liked what was going on with the food scene there. And so, in Summer 2013, he launched the truck, fired up some fun hashtags -- think mothertruckin, #trucklife, #streetmeat -- and watched diners flock.
The menu is short and focused with occasional specials so everything moves quickly. Among the top sellers: the lamb gyro pita and the hand-cut, sea-salted oregano fries.
The secret to his success, said the Ossining native, is "vision, hard work, product, and service," concepts he learned from the restaurant business -- his family owns Niko's in White Plains.
